Simple fish fry recipe

Ingredients :
Cat fish - 1 fillet cut them into small pieces
All purpose flour - 1 tsp
turmeric powder -1/2 tsp
curry powder -1/2 tsp
Rice flour - 1tsp
Lemon juice - 4 drops
salt to taste
To grind
tomato - 1/2ripe 
shallot -1 
garlic -1 clove
red chillies  1
Grind the ingredients together. 

Now add the above ingredients together and marinate the fish for about 2 -3 hours.

In a non stick fry pan - add 1 teaspoon of extra virgin coconut oil - now add the fish to the oil, make sure both sides and the fish is cooked all the way through takes about 3 - 4 minutes.

Serve them hot with white rice.

Paruppu rasam tamil recipe

Paruppu Rasam 
Making paruppu rasam tamil recipe 

Ingredients :

Step 1

Toor dal - 30 gms - Cook them well with salt to taste turmeric powder 1 tsp castor oil 1/4 tsp - Add 1 - 1/2 cups of water to dal  - the dal should be cooked all the way through and should become very soft drain the excess water and keep them separate. 

Step 2

Shallots or small pearl onions - 3 peeled and diced
Tomatoes fully ripe - 2
Rasam powder( 1 tsp jeera seeds 1/2 tsp pepper 1 tsp coriander seeds) dry roasted and ground or you can get store bought rasam powder too salt and sugar to taste with coriander leaves.
Mix the shallots tomatoes rasam powder if needed you can add extra chili powder along with salt and sugar mix the ingredients together well using your palms.

Soak the tamarind  in warm water and keep them separate

Step 3 :

In a deep pan add 1 tsp of Sesame oil , let the oil warm, now add 1/4 tsp of mustard seeds along with 3 - 4 red dried chillies - a pinch of hing - add curry leaves

Now let the mustard seeds splatter

Add the liquid that you made with shallots(onions) and tomatoes let them come to a boil like what you see below.

Next once the liquid comes to a boil like above add the dal water along with tamrind water taste the rasam for salt sugar and tamarind add one teaspoon of ghee.

Let the rasam come to complete boil forming bubbles on the top layer. Make sure the consistency is liquid, and taste the rasam for the salt.

Paruppu Rasam 
Once the Rasam is cooked like in the picture below , turn off the flame close with a lid, ready to serve as a soup or with cooked white rice with pappads.

Fluffy idlis

Making Soft and Fluffy Idlis
Recipe : 
Idli rice - 4 cups
Urud dal - 1 cup 
Fenugreek seeds - 2 tsps


Soak them for about 4 hours and grind them separately  the rice and the dal. When grinding make sure that you grind them into a fine paste.

The consistency of the batter should be pouring consistency. The fenugreek seeds should be soaked separately and should be ground before the rice is ground.
Use your hand to mix both the batters together, Let them outside overnight to ferment.
The fermentation happens well during the summer months in the USA. But during winter it is better if you place them inside your convention oven ( the oven should be turned off) you can leave the light on overnight . Place the batter on a plate so when it overflows it is easier to clean.


How to steam the idli's 

Using an idli cooker or you can use any bigger pan heat two cups of water let them come to boil, Pour the idli batter into the molds like below place them in the container.

Close the lid and let them steam for about 10 minutes, Once the idles are cooked remove them out of the container, Let them cool down for a minute and remove them off the molds.
Now serve them hot with Sambar or curry with GHee. Happy cooking Hotdishes

Tomato pickle south indian recipe, Thakkali thokku tamil recipe

Tomato pickle
Tomato Pickle south indian recipe
Ingredients :
Ripe Tomatoes - 10 finely chop them
garlic -10 cloves

To grind :
Mustard seeds - 2 tsp
Fenugreek seeds - 1 tsp
Red chillies - 6 - 7 to taste
Salt to taste

Tamrind water to taste

Jaggery to taste

Seasame oil - 2 big spoons 

Preparation :

In a heavy sauce pan preferrably non stick
Add the Tomatoes garlic and the ground spices along with salt let them simmer for about 40 - 80 minutes in a low flame. 
Let the water evaporate add salt jaggery and tamring water and let the rest of the water evaporate.

To Season again : 

Add seasame oil in a separate pan, add one teaspoon mustard seeds red chillies asafoetida 

Let them splutter and now add them to pickle. Turn off the stove let the pickle cool down.

Store the pickle in a dry glass jar.

Ingredients :
Small onions - 10 ( shallots ,pearl onions peeled and cut into half)

Senaikilangu Varuval 
Senaikilangu varuval - Yam curry tamil recipe
Ingredients  : To grind for the masala : Grind them well with warm water sprinkled.
Coconut - 1tsp
Red chillies - 3
Turmeric powder- 1 tsp
Cumin 1 pinch
Cardamom 1
cloves cinnamon
dried coriander seeds a pinch
dried chana dal a pinch
Shallots -1
Garlic -2
Peppercorns -1 tsp

To saute
Chopped one small red onion
Chop one tomato 
Ginger sliced 
Suran or seenaikilangu _ we are using a frozen pack - 200 gms
yogurt - 1 tsp
salt to taste

To season : 

Organic extra virgin Coconut oil - 3 tsp
Cloves cinnamon cardamom flennel mustard seeds about 1 tsp all together
Asafoetida a pinch
To grind add them to a mixer
Raw ingredients for the masala

Preparation :
1. In a medium sauce pan , add the coconut oil now add the seasonings let them flavor the oil.
2. Now add the onions green chillies along with the tomatoes saute them with a pinch of salt until the onions turn golden brown.
3. Add the Senaikilangu or Suran to the onions let them cook for about 3 - 5 minutes .

4. Now add the ground masala to the masala with yogurt let them cook in the masala in the low flame.
5. Saute them well for about 30 minutes until the masala is well cooked and sticks well with the senaikalangu.
6. Add few drops of lemon along with coriander leaves.
